Perfect Fried Chicken

This is another one of my Grandmas recipes.

INGREDIENTS:
  • 2 1/2 to 3 lb. Chicken (with skin) - cut in pieces
  • 1/3 cup evaporated milk
  • 3/4 cup flour
  • 3/4 cup crushed cornflakes
  • 2 tsp salt
  • 1/4 tsp pepper
  • vegetable oil
DIRECTIONS:
  • Wash Chicken
  • Combine flour, cornflakes, salt and pepper into a small paper bag
  • Dip chicken into milk, then place in paper bag
  • Shake bag to coat chicken
  • Cover the bottom of a skillet with vegetable oil
  • Brown chicken over medium heat, turning as needed
  • Cover and reduce heat to low and cook 40 to 45 minutes, turning occasionally
  • Remove cover and cook 5 minutes longer to crisp
