Yields 2 servings.
INGREDIENTS:
- 2 boneless, skinless chicken breasts
- 1 can (10 oz.) cream of cheddar soup
- 1 c. salsa
- 1 tsp. ground cumin
- Salt and pepper, to taste
DIRECTIONS:
- Preheat oven to 350°. Place chicken in a baking dish. Season with salt and pepper liberally.
- In a small bowl, combine soup, salsa, and cumin. Pour over chicken. Cover chicken with foil and bake 45 minutes.
- Serve over noodles or with rice.
