Cheesy Fiesta Chicken

Yields 2 servings.



INGREDIENTS:
  • 2 boneless, skinless chicken breasts
  • 1 can (10 oz.) cream of cheddar soup
  • 1 c. salsa
  • 1 tsp. ground cumin
  • Salt and pepper, to taste

DIRECTIONS:
  • Preheat oven to 350°. Place chicken in a baking dish. Season with salt and pepper liberally.
  • In a small bowl, combine soup, salsa, and cumin. Pour over chicken. Cover chicken with foil and bake 45 minutes.
  • Serve over noodles or with rice.
