Warning: HIGHLY addictive and my most requested recipe. This is a Mizzou tailgating staple. I got the recipe from someone my mom works with. Who knows where it came from, and WHO CARES. It's so yummy the whole world should make it.
- 2 - 15oz cans black beans, rinsed
- 1 - 11oz can white shoe peg corn, rinsed
- 2 - 14.5 oz cans of Rotel
- 1/2 of a red onion, chopped
- 1/3 cup lime juice
- 1/3 cup extra virgin olive oil
- 1 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 cup chopped fresh cilantro
- Combine ingredients and stir until blended
- Cover and refrigerate overnight
